RECIPE: Shortbread

If you aren’t a dab hand at home baking, but fancy making something really simple, you can’t go wrong with this super easy recipe for Shortbread!

Ingredients:

  • 150g butter
  • 75g caster sugar
  • 225g gluten free flour – I used Doves Farm Flour
  • 1 tsp xanthum gum
  • extra caster sugar for sprinkling

Method

  1. Cream together the sugar and butter until light and fluffy
  2. Add in the flour and xanthum gum
  3. Mix until well combined (It may look a little dry at first, but it will come together eventually)
  4. Knead lightly on a floured surface until the mixture feels smooth
  5. Roll out into a rectangle and cut into fingers (approx.12)
  6. Place on a baking tray and prick each finger with a fork for the traditional “dotted” shortbread design
  7. Cook in the oven at 180degrees for approximately 15-minutes
  8. Place on a cooling rack and sprinkle with extra sugar
