RECIPE: Apple Crumble Cupcakes

With my brothers birthday falling between Christmas and New Year, I thought I’d earn some extra sister brownie points and bake him some apple crumble cupcakes. As is the”problem” with December birthdays, they’re normally overshadowed by Christmas, So I wanted to go completly off theme and try this recipe that I’d thought of during the Autumn but not had chance to test out. 



  • 170g gluten free flour
  • 170g caster sugar
  • 170g butter
  • 3 eggs 
  • Vanilla paste
  • Cinnamon 


  1. Pre-heat the oven to 180 degrees, and place 9-12 cupcake cases into a cupcake tin 
  2. Using the all-in-one method for the sponge, sieve the flour into a bowl and add the sugar, butter and eggs
  3. Whisk together until all the mixture is combined and it’s a light and fluffy texture (if the mixture seems too think, add a small amount of milk) 
  4. Add in 1tsp of vanilla paste and a sprinkle of cinnamon and gently combine into the mixture 
  5. Divide the mixture across all of your cupcake cases so that each one is half filled 
  6. Bake in the oven for 20-25 minutes until golden brown, and until the cakes spring back when touched 
  7. Leave to cool on a wire rack 

Apple Sauce


  • 1 large cooking Apple 
  • 2tbsp butter 


  • Peel, core and slice the apple 
  • Melt the butter in a pan, add the apple, and stew slowly 

Crumble Topping

  • 75g butter 
  • 3tbps golden syrup 
  • 1 box of Schar digestive biscuits 


  1. Place all of the digestive biscuits into a sealed bag, and using a rolling pin, break all the biscuit into rough crumbs 
  2. Melt the butter in a pan and add the golden syrup and biscuit crumbs
  3. Stir to combine well, and once the butter has melted remove from the heat


 Butter cream icing and assembly


  • 250g icing sugar 
  • 125g butter 


  • Sieve the icing sugar into a mixing bowl and add the butter 
  • Whisk together for around five minutes or until the buttercream is light and fluffy 
  • Meanwhile, using an apple corer or knife, take out the centre of each cupcake but don’t go right through to the bottom of the case
  • Place a spoon of apple sauce in each of the holes of the cupcakes 
  • Using your piping bag, pile the icing in your chosen design 
  • Crumble the digestive mixture on top of each cake
